Organic Adzuki Bean Seeds (Vigna Angularis)

  • To eat adzuki beans fresh, as you would a snap bean, harvest the green pods when the seeds are just barely visible beneath the surface of the pods. Fresh beans should be ready to pick every four to five days. Let pods develop and dry on the vine until they rattle in the pod -- from 90 to 120 days -- to use them as shelling beans. Cut down the entire plant at the end of the season and allow it to dry in a well-ventilated area for at least a week.
